Ice is not one product, and Scotsman builds a machine for each version of it: crystal-clear gourmet cubes for hotel bars and fine dining, square gourmet blocks for spirits, six-sided dice ice that chills a drink fast in a cafe or cinema, soft nugget and cubelet ice for carbonated drinks and self-serve cups, flake ice for fish counters, buffet displays and champagne buckets, and dry scale ice for food processing. The machines are built at Pogliano Milanese, outside Milan, and come as modular heads that sit on a separate storage bin, self-contained units with the bin built in, under-bench cabinets for tight bar space, and dispensers. XSafe uses UV light to generate a reactive oxygen mixture that circulates through the machine, holding back mould, yeast and bacteria between manual cleans; the EcoX range runs on natural refrigerants rather than synthetic gases.
