Merrychef builds high-speed accelerated cooking ovens in the UK, part of Welbilt and distributed across Australia by Moffat. Each model stacks three heat sources into one small cavity — microwave, tuned air impingement and convection — which is how an eikon e1s turns out toasted sandwiches, pizzas and reheated plates ten to twelve times faster than a convection oven. The eikon range runs from the single-deck e1s through the e2s, e3, e4 and e4s, while the newer conneX 12 and conneX 16 add a 7-inch touchscreen, more than 100 pre-programmed recipes and a 12-inch square cavity in a body only 14 inches wide, so it lands on a standard 600mm bench. All of them cook ventless through a built-in catalytic converter and need no extraction hood, which is why they end up in cafes, service stations, bakeries, pubs, hotels and canteens, and on front-of-house counters where a full cookline was never possible.
