Friginox builds blast chillers and blast freezers in France, and the MX range spans most of what a production kitchen needs: compact four- and five-tray reach-in and built-in units that sit under a bench, six, ten, fifteen and twenty-one tray cabinets on 1/1 GN runners, roll-in models that take a loaded trolley straight off the oven, and drop-in refrigeration systems that turn a purpose-built cold room into a blast chiller. The point is getting cooked food down through the danger zone quickly rather than parking it in a coolroom, which is what a pastry section, a bakery, an ice-cream bench or a cook-chill kitchen is asking for. TS7 touchscreen models read the core with a self-adaptive probe and adjust the cycle to suit, with soft and hard chill and freeze modes, ice-cream hardening, ventilated drying and up to forty stored programs; the smaller electromechanical units run on a timer and hold at temperature once the cycle ends. Current models use R455A refrigerant.
