A prep counter fridge is a refrigerated bench with a row of gastronorm pans across the top, so fillings and toppings sit chilled right where the food is made, with more stock in the cabinet below. Planning a prep counter into the kitchen

Sandwich and salad lines. In a cafe or takeaway the prep counter is the make line: pans of fillings on top, bread and wraps on the board in front, and a toaster or sandwich press within reach. Models with an over shelf or glass canopy suit a counter the customer can see.

Pizza lines. Pizza prep fridges have a deeper work surface, some with a marble top, for stretching dough beside the topping pans, and they usually sit straight in front of the pizza oven.

Sizing the run. Count the pans the menu needs, then match the length of the counter to the space between the walls or the next piece of equipment. Counters here run from compact 698mm models to 2370mm long, with drawer versions as well as door versions.
