Mobile cooking modules put the cooking in front of the guest rather than behind a pass. Rieber's Varithek system, made in Germany and distributed in Australia by Moffat, builds a stainless steel station around Gastronorm-sized inserts that lift in and out: induction hobs with eleven power levels and automatic pan detection, glass-ceramic hobs, induction woks, grill plates, combined pasta boilers and fryers, bain marie holding wells, and refrigerated wells that sit between 2 and 10 degrees. The acs stations draw air off three edges through a grease, activated carbon and pollutant filter, so a chef can cook in the dining room without ductwork or a canopy overhead. The modules run on electricity rather than gas. Worth looking at for buffet breakfasts, hotel function rooms, live cooking and carvery stations, staff canteens, and aged-care or school serveries where the menu changes through the day and the counter has to change with it.
